Pear & Blackberry Compote

Ingredients

  • 5 pears, peeled, cored & sliced
  • 1-2 star anise
  • 1 lb blackberries
  • 5 oz caster sugar
  • 1 cinnamon stick

Instructions

  1. Put all the ingredients in a pan and add 5 fl oz water.
  2. Cover and cook over a low heat for about 5 minutes until the blackberry juice begins to run, stirring once or twice.
  3. Simmer until the pear slices are very tender. The cooking time will depend on the ripeness of the pears. Very ripe pears will take only a few minutes.
  4. Serve hot or cold with clotted cream, ice cream or greek yoghurt.
