Description

Lady's Finger
A coarse, erect annual up to 2 m tall, with a large sulphur-yellow flower having a maroon eye. The stem is slightly hairy. Leaves are large, alternate and cordate. The fruit is a pointed and more or less cylindrical (10-20 cm long) 5-ridged capsule. The immature pods ready for harvest are dark green, covered with upward pointing hairs. It is very mucilaginous and contains numerous round seeds. Seeds colour varies from dark green, white to brown and black. If not harvested, the capsule dries up and dehisces into 5 parts.

Origin
The plant originated from West or Central Africa and reported to be found wild in upper Nile country. It has been used in Egypt for centuries and then spread to Europe and the Far East in Christian times. It was brought to the New World in the 1600s.

Uses
The immature fresh green pods are used as a vegetable, often incorporated into stews, soups or gravies, or mixed with other vegetables. The ripe seeds yield an edible oil.
