Description


Lemon Grass
A densely-tufted, fragrant grass with hairy leaves. It rarely flowers. Since it grows easily, it has been vegetatively propagated for centuries.

Origin

It probably originated from Malaysia because as Burkhill (1935) reported, "though a group of European botanists first saw it in India, available information indicated that it was brought to India from Malaysia".

Uses

The fleshy leaf bases and the young stem to which they are attached are used for flavouring food, especially fish and curries, imparting an unusual yet delicious flavour to the food. Apparently, it was widely cultivated in the topics for a variety of other purposes - to prevent soil erosion, cut leaves used as a mulch, as a source of aromatic oils used in scents and as a substitute for tea (drunk as lemon-grass-tea in Europe).

Description


Maize
An annual crop which can reach 2-4 m tall. It has male flowers on terminal panicles and female flowers, on side spikes. After fertilisation, the female spikes form "ears" in which the grains (fruits) are arranged in more or less regular rows. The ears are covered by leafy husks with silks exposed on the top. These silks are the remains of the styles of the female flowers.

"Baby" Corns
It is a native of tropical America. It is widely cultivated in many parts of the world.

Uses

Several varieties can be found in the market. They are mostly sweet corns (var. rugosa). The entire cob with the husk is either boiled or steamed. As a vegetable, the grains are used in soups and many cooked dishes. In recent years, "baby" corns are becoming increasingly common. It is still not clear whether they are harvested from a dwarf variety or a new variety with crowded side "ears".
